A healthy, easy meal that's easy on the wallet

Omelets are like the empty canvases of the food world.

If you can boil water, then you can make an omelet. A surge of motivation to achieve goals comes at the beginning of each year. Near the top of this list of goals is always weight loss.

"My new year's resolution is to eat more healthy," said Kassidy Martin, a freshman agriculture economics major.

For college students especially, weight is not an easy thing to lose. A quick, healthy and inexpensive escape from Sbisa is an omelet.

Omelets are great because they can be tailored exactly to the eaters wants. For a Mediterranean style, fill an omelet with olives, tomatoes, chives and feta. For a Mexican omelet, use salsa and cheese. My personal favorite is an egg white omelet with brown mushrooms, onion, rosemary and Swiss cheese.

The problem with eggs, however, has been that their preparation requires a bit of work. Cooking them takes a while and requires the chef's full attention.

"I like omelets with lots of vegetables, like mushrooms," said Kayla Kahanek, a freshman mechanical engineering major. "They are kind of hard to make though."

Clean up is even worse. Scrubbing eggs off of a pan is not an enjoyable or speedy task. This glorious recipe will ease the pain of monotonous cooking and clean up and crush any excuse to skip out on a healthy meal.

Another healthy snack is a smoothie. Smoothies are great to have when you are on the go. Put all of the ingredients in a blender, and let it run while you get ready. Drink it on the way to class.

Fruit is a superb way to curb cravings for sweets. Cranberries and raspberries both contain antioxidants which not only fight cancer, but are good for the skin. Yogurt is also good for digestion.

Cranberry Smoothie
1 cup cranberries
2/3 cup cran-raspberry juice
1 cup raspberries
8 oz. of yogurt, preferably Raspberry
1 1/2 cups of ice

Blend until smooth. Taste it and decide if you need more ice or juice.

The Easy Omelet
2 or 3 eggs
Vegetables of your choice
Salsa
Shredded cheese
Salt and pepper
A Ziplock bag
Saucepan half full of water

Instructions:
Bring the water to a rolling boil. Meanwhile, put all of the ingredients into a zip lock bag and squish them around. Put the baggy in the water for 12 minutes. Dump your perfect omelet out on a plate and enjoy.
